However, the first explicit and "official" mention of culatello dates back to 1735, in a document from the Municipality of Parma.
The dialect poet from Parma, Giuseppe Maria Callegari (1785-1829) who mentions it among the dishes served in paradise, while Giuseppe Verdi (1813-1901) brings it to the Tsar's table in St. Petersburg.
But it will be the "vault" Gabriele D'Annunzio (1863-1938) who will give him worldwide fame.
