Parma Cured Meats: Traditional Specialties of the Food Valley

Parma is famous throughout the world for its extraordinary tradition of cured meats. For centuries, local producers have combined carefully selected pork, traditional techniques, slow ageing and the unique climate of the Parma territory to create some of Italy’s most celebrated specialties.

PDO and PGI Cured Meats from Parma

Prosciutto di Parma PDO

One of the symbols of Parma’s gastronomy. Produced according to strict traditional methods, Prosciutto di Parma PDO is naturally cured using pork legs and salt, developing its characteristic delicate, slightly sweet flavour during ageing.

Culatello di Zibello PDO

One of the most prestigious cured meats of the Parma lowlands. Culatello di Zibello PDO is traditionally produced in the lands along the Po River, where the humid winters and warm summers contribute to its distinctive ageing process, aroma and flavour.

Salame Felino PGI

Named after the town of Felino, near Parma, Salame Felino PGI is appreciated for its delicate aroma, soft texture and balanced flavour. It is one of the most representative salami specialties of the Parma area.

Coppa di Parma PGI

Produced from carefully selected pork neck, Coppa di Parma PGI is slowly cured until it develops its characteristic fragrance, tenderness and rich yet balanced flavour.

Other Traditional Cured Meats of Parma

Fiocco di Culatello

Produced from the smaller and leaner muscle of the pork leg, Fiocco di Culatello is closely connected to the tradition of Culatello. Its flavour is generally delicate and elegant, with a characteristic aroma developed during ageing.

Spalla Cotta di San Secondo

A historic specialty associated with San Secondo Parmense, Spalla Cotta is traditionally served warm and sliced by hand. Its intense aroma and tender texture make it one of the most distinctive products of Parma’s culinary heritage.

Spalla Cruda di Palasone

A lesser-known but fascinating specialty of the Parma lowlands. Spalla Cruda di Palasone is slowly cured rather than cooked, developing an intense aroma and a distinctive traditional flavour.

Rolled Pancetta

Prepared from pork belly, seasoned with salt and spices and then rolled before ageing. Parma-style rolled pancetta is appreciated for its softness, aroma and balance between lean meat and fat.

Lardo

A traditional pork product slowly cured with salt and spices. It is usually served in very thin slices, often accompanied by bread or other simple ingredients that enhance its delicate texture and flavour.

Strolghino di Culatello

A small and tender salami traditionally prepared using lean meat obtained during the processing of Culatello. Strolghino requires a relatively short ageing period and is known for its delicate, slightly sweet flavour.

Mariola

An ancient specialty of the Parma lowlands, traditionally made using selected pork meat and enclosed in a natural casing. Depending on the local tradition and preparation, Mariola can be enjoyed cured or cooked.

Cicciolata

A rustic specialty deeply connected to Parma’s rural traditions. Cicciolata is prepared from pork meat and other ingredients obtained during traditional pork processing, pressed together to create a compact and flavourful product.

Ciccioli – Greppole

Known locally as greppole, ciccioli are a traditional product of rural pork processing. They are obtained during the rendering and pressing of pork fat and have long been part of the traditional cuisine of Parma and Emilia.
