Porcari & Tambini is a traditional dairy based in Bedonia, in the heart of the Upper Val Taro. Established in 1976, the company has developed a strong connection with the surrounding mountain area and specialises in the production of Mountain Parmigiano Reggiano.
One of the distinctive features of its production is the origin of the milk, which is collected exclusively from farms in the Upper Val Taro, at an average altitude of approximately 700 metres above sea level.
Over the years, Porcari & Tambini has expanded its production while maintaining its connection with local farms and traditional cheesemaking.
The dairy now processes around 60,000 quintals of milk per year and produces approximately 28 wheels of Parmigiano Reggiano every day.
This mountain environment gives the production a particularly strong connection with the landscape and agricultural traditions of the Parma Apennines.
The dairy also has a dedicated production line for organic Parmigiano Reggiano.
Organic cheese is available directly from the company's shop, offering visitors the opportunity to purchase Parmigiano Reggiano close to the place where it is produced.
Porcari & Tambini also has its own shop, where visitors can purchase Parmigiano Reggiano together with a selection of traditional food products.
Porcini mushrooms, truffles, cured meats and other Italian specialities complement the range, making the shop an interesting stop for visitors who want to discover the flavours of the Upper Val Taro.
