Caseificio Galli: Parmigiano Reggiano from the Parma Lowlands
Located in Pieveottoville, within the municipality of Polesine Zibello, Caseificio Galli is a dairy closely connected with the agricultural landscape and cheesemaking heritage of the Parma lowlands.
The company produces Parmigiano Reggiano and traditional butter, using milk from selected farms in the Bassa Parmense and combining traditional cheesemaking knowledge with modern technology and quality controls.
Parmigiano Reggiano
Parmigiano Reggiano is at the heart of the dairy's production.
Local milk is transformed following the traditional production process and the cheese is then left to mature, with different ageing periods creating distinctive textures and increasingly complex flavours.
Longer maturation gives Parmigiano Reggiano its characteristic crumbly texture and rich aromatic profile, making it equally suitable for tasting on its own or using in traditional Italian cuisine.
Traditional Butter
Another distinctive Caseificio Galli product is Burro Gallo, a butter closely linked to local dairy tradition.
It is made using cream that naturally rises from the evening milk during the traditional Parmigiano Reggiano production process.
Its creamy character makes it suitable for cooking, spreading on bread or enjoying alongside some of the traditional cured meats of the Parma lowlands.
Farm Shop
Caseificio Galli has its own farm shop in Pieveottoville, where visitors can purchase Parmigiano Reggiano, butter and other local specialties directly.
It is an interesting stop for travellers exploring Polesine Zibello, the land of Culatello and the countryside associated with Giuseppe Verdi.
